2.5 cups of dry quinoa (red)
5 cups water
Approx a pound of mixed nuts (salted or unsalted)
Raisins (approx 1.5 handfuls)
1 apple (diced)
Dried cranberries (approx 1.5 handfuls)
1 medium sized red onion (diced)
6 cloves of garlic (chopped)
Orange juice
Canola oil
Curry powder
Prepare quinoa: Put 2.5 cups of quinoa into 5 cups
of water in a saucepan and cover it. Bring to a boil then reduce
to a simmer. Keep covered until quinoa is cooked.
In a separate saucepan heat the canola oil (low
heat), add garlic until the aroma of garlic is smelled. Then add
onions until translucent. Then add more canola oil and add the nuts.
When oil absorbed add orange juice to cover the mix. Then add approx
1.5 spoons of curry. Allow nuts to soften then add the diced apple,
then raisins and cranberries. After this add about another spoon
of curry. If using unsalted nuts add salt to taste. Continue to
add orange juice alternating with canola liberally as the mix cooks.
When mixture is ready add the quinoa and mix. Add additional curry
or salt to taste.
